These yummy almond cookies are wheat free and uses rapadura as sweetener. The almond meal is a good source of protein, making these cookies a yummy, filling and nutritious snack. This recipe can also be used as a base for inventing other cookie variation, including raisons, chocolate chips etc.
Ingredients
Makes approximately 20 cookies
1 1/2 cup almonds
1/2 softened butter
1 cup arrow root flour
1/2 cup rapadura
1/2 teaspoon salt
grated rind of 1 lemon
1 teaspoon almond extract
Method
Place almonds on food processor and process to a fine meal.
Add remaining dry ingredients to a bowl and mix.
Add the softened butter and mix until a firm dough is formed.
Form dough into walnut size balls and place on a buttered cookie sheets.
Bake at 180 degrees for approximately 20min. After 5 minutes in the owen press cookies lightly down with a fork.
Let cool completely on a wire rack and keep in an air tight container.
The cookies last longer of stores in a refrigerator.
